From Milk & Honey to Modern Classic
Australian bartender Sam Ross created the Penicillin at New York City's Milk & Honey in 2005. Inspired by the bar's Gold Rush, he replaced bourbon with Scotch and added ginger plus a float of smoky Islay single malt. The combination spread well beyond New York and became one of the defining modern cocktails of the early 21st century.

- Muddle gently. Press the ginger enough to release its juice and aroma without pulverizing it.
- Use fresh lemon juice. The acidity is central to balancing the honey syrup and whisky.
- Fine-strain the drink. This catches small pieces of muddled ginger and gives the cocktail a cleaner texture.
- Use fresh ice in the glass. Don't dump the shaker ice into the serving glass.
- Float the Islay Scotch last. Keeping it on the surface makes its smoke much more noticeable on the nose.

Directions
Muddle the Ginger
Add the Ginger to a cocktail shaker and muddle gently to release its flavor.
Add the Ingredients
Add the Blended Scotch Whisky, Lemon Juice, and Honey Syrup.
Shake with Ice
Fill the shaker with ice and shake until thoroughly chilled.
Fine-Strain over Ice
Fine-strain into a chilled Old Fashioned Glass over fresh ice.
Float the Scotch
