A Guinness Float transforms Ireland's most famous stout into an indulgent dessert drink. Rich roasted malt, subtle coffee notes, and creamy vanilla ice cream create a surprisingly balanced float that's sweet without overwhelming the signature character of Guinness.

An Irish Twist on the Ice Cream Float

Inspired by the classic American root beer float, the Guinness Float became popular as bartenders and home entertainers discovered how well creamy vanilla ice cream complements the roasted flavors of Irish stout. The result is a dessert that's simple to prepare yet memorable to serve.

What You'll Need

Ingredients

  • Guinness® Draught Stout – the classic choice, offering smooth roasted malt, coffee, and chocolate notes with its signature creamy nitrogenated texture.
  • Vanilla Ice Cream – provides sweetness and creates the float's rich, velvety body.

No Guinness? A milk stout or chocolate stout makes an excellent substitute while maintaining the dessert-like character.

Equipment

  • Beer mug or pint glass
  • Ice cream scoop
  • Long spoon
  • Straw (optional)

Why This Float Works

The slight bitterness of Guinness balances the sweetness of vanilla ice cream, creating a dessert that never feels overly sugary. As the ice cream slowly melts, it softens the stout's roasted character into a creamy, milkshake-like finish.

Variations

  • Try chocolate or coffee ice cream for deeper roasted flavors.
  • Add whipped cream and chocolate shavings for an extra indulgent presentation.
  • Sprinkle flaky sea salt over the whipped cream for a sweet-and-salty finish.
  • Add a drizzle of chocolate syrup for a dessert-style twist.

Helpful Tips

  • Chill the glass before building the float.
  • Pour the stout slowly to control foaming.
  • Serve immediately for the best texture and flavor.
  • Enjoy with both a spoon and straw as the ice cream melts.
