- Combine the sugar and water in a small saucepan.
- Add the cinnamon sticks.
- Bring to a gentle simmer, stirring until the sugar dissolves.
- Remove from heat and let the cinnamon steep for 20–30 minutes (longer for stronger flavor).
- Strain out the sticks and store the syrup in a sealed bottle in the fridge for up to 2 weeks.
