Authentic Mamajuana (Dominican Rum, Wine & Honey Infusion)
Authentic Mamajuana is a Dominican infusion of rum, red wine, honey, and tree bark, known for its deep, evolving flavor. This traditional version includes the essential curing step and reusable infusion process.

Mamajuana is a traditional Dominican infusion made with rum, red wine, honey, and a blend of tree bark and herbs. Unlike quick infusions, this version evolves over time, developing deeper flavor with each batch as the same bark is reused.
Background
Mamajuana traces back to a blend of Taíno herbal traditions and later Spanish and African influences. Originally prepared as a medicinal tonic using native plants, it evolved into a national drink of the Dominican Republic. Today, it’s commonly made at home and shared socially, often kept as a long-term infusion that improves with age.
What You’ll Need
Ingredients
- Mamajuana bark blend – the woody, herbal base that defines the drink
- Dominican Rum – the primary spirit that extracts and carries flavor
- Red Wine – adds tannin, depth, and balance
- Honey – softens bitterness and rounds the infusion
Substitutions
- No Dominican rum? Use any aged or dark rum
- Honey can be adjusted to taste depending on desired sweetness
Equipment
- Glass bottle or mason jar
- Fine mesh strainer (optional for serving)
What Makes This Version Authentic
The defining step is the initial curing process, where the bark is soaked and the first liquid is discarded. This removes harsh bitterness and prepares the blend for long-term use. Unlike most infused drinks, Mamajuana is meant to be reused, with each refill developing a smoother, more integrated flavor.
Substitutions & Variations
- Adjust the honey level for a drier or sweeter profile
- Use a lighter rum for a softer, less intense infusion
- Some variations include a small amount of cinnamon or citrus peel, though traditional builds rely on the bark blend alone
Helpful Tips
- Always discard the first soak to avoid excessive bitterness
- Store at room temperature in a sealed container
- Shake gently before serving to keep flavors integrated
- The bark can typically be reused multiple times before losing potency
- Flavor improves over time—later batches are often smoother than the first

Ingredients
- 1 full pack / ~1–2 cups loose Mamajuana bark blend
- 2 cups
- 1 cup Red Wine
- 3/4 cup
Directions
Add the Mamajuana bark blend to a glass bottle or mason jar.
Pour in enough Dominican Rum to fully cover the bark. Seal and let sit for 24–48 hours.
Discard this first soak to remove initial bitterness (do not skip this step).
Add Dominican Rum, Red Wine, and Honey to the same jar with the cured bark.
Seal and shake gently until the Honey is fully dissolved.
Store at room temperature and let steep for at least 3–7 days before drinking.
Serve in small glasses, with or without ice.
After finishing the liquid, reuse the same bark by refilling with Rum, Red Wine, and Honey. The flavor will continue to develop over multiple batches.
A living infusion that deepens with time, Mamajuana is as much a process as it is a drink.
