The Bramble cocktail brings together gin, fresh lemon, simple syrup, and blackberry liqueur in a crisp drink served over crushed ice. Its balance of tart citrus, botanical gin, and dark berry sweetness makes it approachable without losing its character, while the final pour of crème de mûre creates the drink's distinctive streaked appearance.

A Modern Classic from Soho

The Bramble was created by British bartender Dick Bradsell while he was working at Fred's Club in Soho, London, in the mid-1980s. Bradsell wanted to create a distinctly British cocktail and drew inspiration from the blackberry brambles he remembered from his childhood on the Isle of Wight. The drink later became an internationally recognized modern classic.

What You'll Need

Ingredients

  • Gin - Provides the botanical backbone and keeps the drink crisp.
  • Fresh Lemon Juice - Supplies the acidity that balances the sweet ingredients.
  • Simple Syrup - Softens the lemon and rounds out the sour structure.
  • Blackberry Liqueur - Adds dark fruit sweetness and the Bramble's signature finish.
  • Lemon Slice - Adds a fresh citrus accent when used as a garnish.
  • Blackberry - Reinforces the drink's defining fruit flavor and appearance.

For the current IBA version, use the classic gin, lemon, sugar, and blackberry combination rather than changing the base spirit.

Equipment

  • Cocktail shaker
  • Cocktail strainer
  • Jigger or measuring tool
  • Old fashioned glass
  • Crushed ice

Why the Bramble Works So Well

At its core, the Bramble uses the familiar structure of a gin sour. Lemon brings acidity, simple syrup provides sweetness, and gin supplies the botanical base. Blackberry liqueur then adds another layer of fruit and sweetness without completely taking over the drink.

Serving it over crushed ice is equally important. The ice gradually softens the tartness and strength while the blackberry liqueur works its way through the drink.

Substitutions & Variations

  • Choose a classic dry gin: A juniper-forward gin gives the cocktail a firm backbone, while softer citrus-led gins make the drink more fruit-forward.
  • Use another blackberry liqueur: Crème de mûre is the traditional choice, but another quality blackberry liqueur can work if its sweetness is similar.
  • Adjust for your liqueur: Blackberry liqueurs vary in sweetness. If yours is especially rich, keep the measured pour restrained rather than increasing it.
  • Explore Bradsell's original style: Historical versions published by the drink's creator use different proportions and preparation. This recipe follows the current IBA specification.

Helpful Tips

  • Use freshly squeezed lemon juice because citrus is a major part of the drink's balance.
  • Fill the glass generously with crushed ice before straining.
  • Pour the blackberry liqueur over the finished drink rather than shaking it with the other ingredients.
  • Pour slowly in a circular motion so the liqueur creates visible streaks through the crushed ice.
  • Add more crushed ice if the drink settles significantly before serving.
  • Pair the Bramble with light appetizers, soft cheeses, or berry-based desserts.
