Caipirão - Licor Beirão & Lime Portuguese Caipirinha Cocktail
The Caipirão is a Portuguese Caipirinha variation made with Licor Beirão, fresh lime, sugar, and cracked ice. Herbal, citrusy, and boldly sweet, it swaps cachaça for Portugal's signature liqueur in a simple muddled cocktail.
Intermediate
The Caipirão cocktail takes the familiar lime-and-ice structure of a Caipirinha and gives it a distinctly Portuguese center. Licor Beirão brings sweet herbal and spice notes, fresh lime supplies the acidity, and cracked ice keeps the drink cold and lively. It is easy to assemble directly in the glass and has enough character to stand apart from its Brazilian inspiration.
From Caipirinha to Caipirão
Caipirão emerged in Portugal in 2001 as a showcase for Licor Beirão, created in partnership with Professor Eduardo Vicente. It borrows the muddled-lime format of Brazil's Caipirinha but replaces cachaça with Portugal's herbal liqueur. The IBA now recognizes Caipirão as a Caipirinha variation, although Licor Beirão's own house recipe notably uses no added sugar.
What You'll Need
Ingredients
- Beirão: The sweet, herbal liqueur that defines the drink and replaces cachaça.
- Lime: Supplies fresh acidity, citrus aroma, and the oils released during muddling.
- Sugar: Adds additional sweetness and texture in the IBA-style specification.
Substitution tip: There is no close substitute for Licor Beirão if you want the drink to remain a true Caipirão. Another herbal liqueur can make an interesting lime cocktail, but it will have a different flavor profile.
Equipment
- Old Fashioned glass
- Muddler
- Jigger
- Bar spoon
One Familiar Technique, Very Different Flavor
The Caipirão shows how dramatically one ingredient swap can reshape a cocktail. Instead of the grassy, spirit-forward character of cachaça, Beirão contributes herbs, spice, and built-in sweetness. Lime keeps that richness in check, while cracked ice adds enough dilution to make the finished drink brighter and easier to sip.
Substitutions & Variations
- Try the Licor Beirão house style: Use Beirão, half a lime, and crushed ice with no added sugar. This is the producer's current recipe and produces a less sweet Caipirão.
- Adjust the ice: Crushed ice gives faster chilling and dilution, while larger cracked pieces keep the drink stronger for longer.
- Dial back the sweetness: If you are not specifically following the IBA variation, reducing or omitting the added sugar lets Beirão provide the sweetness on its own.
- Add a simple lime garnish: A lime wheel or wedge reinforces the fresh citrus aroma without changing the drink.
Helpful Tips
- Muddle the lime gently rather than pulverizing the peel.
- Use plenty of fresh cracked or crushed ice. The dilution is part of the drink's balance.
- Stir from the bottom of the glass so the sugar and lime juice do not remain underneath the ice.
- Taste the producer-style no-sugar version if the IBA specification feels too sweet for you.
- For several drinks, cut the limes ahead of time but wait to muddle them until serving so the peel does not sit crushed for an extended period.
- Serve with salty snacks, grilled seafood, or petiscos for an easy Portuguese-inspired pairing.

Type of Glass
Old Fashioned Glass
Prep Time
3 min
Ingredients
- 2 oz. Beirão
- 1, cut into small wedges Lime
- 4 tsp.
Directions
Muddle the Lime and Sugar
Add the Lime and Sugar to an Old Fashioned glass and muddle gently to release the juice and aromatic oils.
Muddle with light pressure. Crushing the peel too aggressively can make the drink more bitter.
Add Ice and Beirão
Fill the glass with cracked ice and add the Beirão.
Stir and Serve
Stir gently from the bottom of the glass until the Sugar is incorporated and the drink is well chilled. Serve immediately.
Herbal Beirão, muddled lime, and plenty of ice give the Caipirão its unmistakably Portuguese take on a Caipirinha.
