Vieux Carré - Rye, Cognac & Bénédictine New Orleans Classic

The Vieux Carré is a New Orleans classic built from rye whiskey, Cognac, sweet vermouth, Bénédictine, and Peychaud's Bitters. Rich, herbal, and spirit-forward, this IBA cocktail layers two base spirits into one slow-sipping drink.

The Vieux Carré brings rye whiskey and Cognac together in equal measure, then rounds them out with sweet vermouth, Bénédictine, and Peychaud's Bitters. The result is rich, spicy, herbal, and firmly spirit-forward without allowing either base spirit to dominate. This Vieux Carré cocktail is one of New Orleans' defining stirred classics.

Born in the French Quarter

Walter Bergeron created the Vieux Carré in 1938 while working at the Hotel Monteleone in New Orleans. Its name is the French term for the city's French Quarter and translates to "old square." The drink combines American rye, French Cognac, Italian-style vermouth, and French herbal liqueur in a distinctly New Orleans composition.

What You'll Need

Ingredients

  • Rye Whiskey - provides spice, grain character, and a dry whiskey backbone.
  • Cognac - contributes fruit, oak, and a rounder brandy character.
  • Sweet Vermouth - adds sweetness, herbs, and wine-based depth.
  • Bénédictine - brings concentrated honeyed herbs and spice.
  • Peychaud's Bitters - supplies the distinctive anise, spice, and aromatic bitterness associated with New Orleans cocktails.
  • Orange Zest - adds fresh citrus oils over the finished drink.
  • Maraschino Cherry - provides the traditional fruit garnish.

Bourbon can replace rye for a softer and sweeter variation, although it changes the drink's character. A quality brandy may stand in for Cognac when necessary. Another rich herbal liqueur can approximate Bénédictine, but the finished drink will no longer have the classic Vieux Carré profile.

Equipment

  • Mixing glass
  • Jigger
  • Teaspoon
  • Bar spoon or other long stirring spoon
  • Cocktail strainer
  • Cocktail Glass
  • Ice

Three Equal Parts, One Layered Drink

Rye, Cognac, and sweet vermouth each occupy the same amount of space in the glass, but they play very different roles. Rye brings spice, Cognac contributes rounded fruit and oak, and vermouth connects them with sweetness and botanicals. A teaspoon of Bénédictine is enough to add herbal depth without taking control.

Substitutions & Variations

  • Use bourbon instead of rye for a rounder and sweeter whiskey profile.
  • Substitute a good aged brandy when Cognac is unavailable.
  • Change the sweet vermouth to adjust the herbal and bitter character.
  • Reduce the Bénédictine slightly if you prefer a drier variation.
  • Serve over one large cube for an on-the-rocks house variation instead of the IBA's up presentation.
  • Add a dash of Angostura bitters for a variation closer to the documented 1938 formulation.

Helpful Tips

  • Refrigerate opened sweet vermouth to preserve its flavor.
  • Measure the Bénédictine carefully. A small amount has a noticeable effect.
  • Use plenty of solid ice so the drink chills without excessive dilution.
  • Stir rather than shake to retain the smooth texture expected from a spirit-forward cocktail.
  • Express the orange zest directly over the surface before adding the garnish.
  • For several servings, combine the liquid ingredients in proportion ahead of time, refrigerate, and stir each serving with ice before pouring.
