Tommy's Margarita - 100% Agave Tequila & Lime Cocktail
Tommy's Margarita strips the Margarita down to 100% agave tequila, fresh lime, and agave nectar. Created by Julio Bermejo in San Francisco, this modern IBA classic skips orange liqueur so tequila remains the clear focus.
Intermediate
The Tommy's Margarita is a three-ingredient tequila cocktail with a direct, agave-forward profile. Fresh lime provides firm acidity, agave nectar supplies matching sweetness, and 100% agave tequila stays front and center. Served over fresh ice, it is simple enough for a home bar but precise enough that ingredient quality makes a noticeable difference.
A San Francisco Modern Classic
Julio Bermejo created Tommy's Margarita at his family's Tommy's Mexican Restaurant in San Francisco in the early 1990s. Instead of the orange liqueur used in a traditional Margarita, Bermejo paired 100% agave tequila with fresh lime juice and agave sweetener. The drink helped showcase higher-quality tequila and eventually became an internationally recognized modern classic.
What You'll Need
Ingredients
- Agave Tequila - provides the drink's central cooked-agave and spirit character.
- Lime Juice - supplies fresh acidity and keeps the agave sweetness in balance.
- Agave Nectar - sweetens the cocktail while reinforcing its agave profile.
Use a tequila labeled 100% agave rather than a mixto tequila. If agave nectar is unusually thick, dilute it slightly with water so it incorporates more easily during shaking.
Equipment
- Cocktail shaker
- Jigger
- Hawthorne strainer
- Rocks glass
Why the Tequila Stands Out
A classic Margarita normally includes orange liqueur. Tommy's version removes it entirely, leaving tequila, lime, and agave to carry the drink. That simpler structure makes the tequila more obvious and gives the cocktail a focused sweet-sour balance without an additional orange flavor competing for attention.
Substitutions & Variations
Blanco tequila gives the brightest, most direct agave profile, while reposado can add light oak and vanilla notes. A small amount of diluted agave syrup can replace very thick nectar without changing the core flavor. Adding orange liqueur creates a more conventional Margarita, but it is no longer the defining Tommy's specification.
Helpful Tips
Use freshly squeezed lime juice because there are only three ingredients and stale citrus is easy to notice. If your agave nectar is concentrated, taste the shaken drink before serving and consider slightly diluting the nectar rather than changing the recipe ratio dramatically. Use plenty of fresh ice in the serving glass and shake firmly for good dilution and chilling.
