Born at Don the Beachcomber
Donn Beach created the Zombie during the formative years of Don the Beachcomber in Hollywood in the 1930s. Why Three Rums?

- Make Donn's Mix from two parts fresh grapefruit juice and one part cinnamon syrup.
- Absinthe can provide a similar anise accent when Pernod is unavailable, but use it sparingly.
- Adjust the cracked ice rather than adding extra juice if you want slightly more dilution.
Helpful Tips
- Prepare Donn's Mix before starting the cocktail.
- Use freshly squeezed lime and grapefruit juice.
- Measure every ingredient. The Zombie has enough components that casual free-pouring can quickly throw it out of balance.
- Use cracked ice rather than large cubes in the blender.
- Pulse for only a few seconds. The goal is rapid chilling and integration, not a smooth frozen drink.
- Give the mint a light slap before garnishing to release its aroma.
- Serve immediately because the crushed ice continues diluting the drink.
- For several servings, pre-batch the liquid ingredients but blend each drink with fresh cracked ice as it is ordered.

Directions
Add the Ingredients
Add the Dark Jamaican Rum, Gold Puerto Rican Rum, Demerara Rum, Lime Juice, Falernum, Donn’s Mix, Grenadine, Angostura Bitters, and Pernod to an electric blender.
Add Cracked Ice
Add cracked ice to the blender.
Pulse Blend
Pulse blend for only a few seconds to chill and combine without completely liquefying the ice.
Pour and Garnish
Pour into the Collins Glass and garnish generously with Mint Leaves.
