Mai Tai (IBA) – Jamaican Rum, Rhum Agricole & Orgeat Tiki Classic
The Mai Tai (IBA) combines Jamaican rum and rhum agricole with fresh lime, orange curaçao, orgeat, and simple syrup for a tart, nutty, rum-forward tiki cocktail. The split rum base gives this version a distinctive mix of rich Jamaican character and grassy cane notes.
Intermediate
The Mai Tai (IBA) builds its tropical character without relying on pineapple juice, grenadine, or other heavy fruit mixers. Jamaican rum brings depth and ripe fruit notes, rhum agricole adds a grassy cane character, and fresh lime keeps the drink sharp. Orange curaçao and orgeat provide citrus, almond, and enough sweetness to pull the split rum base together.
The IBA Take on the Mai Tai
The Mai Tai originated with Victor Bergeron at Trader Vic's in Oakland in 1944, but the drink has been adapted repeatedly as rum styles and availability changed. This IBA version uses a split rum base rather than the single Jamaican rum foundation associated with the earliest formula, giving the cocktail a different but still distinctly rum-forward profile.
What You'll Need
Ingredients
- Jamaican Rum: Provides rich molasses, tropical fruit, spice, and the assertive rum character at the center of the drink.
- Rhum agricole: Adds fresh sugarcane, grassy, and herbal notes that contrast with the Jamaican rum.
- Orange Curacao: Brings orange aroma, sweetness, and a lightly bitter citrus edge.
- Orgeat Almond Syrup: Adds almond richness and softens the sharper citrus and rum notes.
- Lime Juice: Supplies the acidity that keeps the drink bright and balanced.
- Simple Syrup: Fine-tunes the sweetness without adding another competing flavor.
Substitution tip: If rhum agricole is unavailable, another cane-forward rum can produce a workable variation, but it will change the character of this particular version. A dry orange curaçao is preferable to a very sweet orange liqueur.
Equipment
- Cocktail shaker
- Jigger
- Old Fashioned glass
- Crushed ice
- Citrus juicer
Two Rums, Two Different Jobs
The split rum base is what separates this version from a single-rum Mai Tai. Jamaican rum contributes weight, fruit, and aromatic intensity, while rhum agricole brings a leaner, grassy sugarcane note. Lime, curaçao, and orgeat sit between them, helping two very different rum profiles work as one drink.
Substitutions & Variations
- Use a different Jamaican rum: A fuller, funkier Jamaican rum produces a more assertive cocktail, while a softer aged style makes the drink rounder.
- Adjust the agricole: A more aromatic rhum agricole will make the cane character more prominent.
- Choose a drier curaçao: This can sharpen the orange character without pushing the cocktail too sweet.
- Use rich simple syrup carefully: If using a concentrated 2:1 syrup, reduce the amount to avoid over-sweetening.
- Try the Trader Vic's approach: A Mai Tai built entirely around Jamaican rum creates a notably different version and puts more emphasis on the original rum-driven concept.
Helpful Tips
- Squeeze the lime immediately before mixing.
- Measure the orgeat and simple syrup carefully because small changes can noticeably shift the balance.
- Use plenty of cold ice in the shaker to chill the six-ingredient mixture quickly.
- Crushed ice gives the finished cocktail its characteristic texture and continued dilution.
- Give the mint a light slap before garnishing to release its aroma.
- Pour slowly when transferring the drink so the crushed ice stays controlled.
- For several servings, pre-batch the rums, curaçao, orgeat, and simple syrup. Add fresh lime and shake each drink individually.
