Thai Spiced Iced Coffee with Cardamom Cream Float
Thai Spiced Iced Coffee blends bold brewed coffee with cardamom, coriander, and a silky cream float for a refreshing specialty drink inspired by Thai café culture. Sweet, aromatic, and perfectly chilled, it’s an elevated take on classic iced coffee.

Strong, aromatic, and layered with spice, Thai Coffee turns everyday iced coffee into something more expressive. This version leans into cardamom and coriander for warmth, then finishes with a rich cream float that slowly blends into the chilled coffee. It’s refreshing, slightly indulgent, and easy to make at home.
Background
Across Thailand, street vendors serve intensely brewed coffee over crushed ice, sweetened generously and finished with milk or cream. This variation builds on that tradition by infusing warm spices directly into the brew, giving the drink extra depth while keeping its signature sweetness and chill.
What You’ll Need
Ingredients
- Coffee – The bold base that carries the spice and sweetness.
- Cardamom Pods – Adds floral warmth and subtle peppery depth.
- Coriander (Ground) – Brings a light citrus note that brightens the brew.
- Sugar – Balances bitterness and enhances the spice profile.
- Heavy Cream – Creates a rich float and smooth finish.
- Ice – Chills the drink and gives it that classic Thai café texture.
No heavy cream? Try evaporated milk for a more traditional Thai-style finish, or sweetened condensed milk for a richer dessert version.
Equipment
- Collins glass
- Brewing method of choice
- Spoon (for floating the cream)
The Cream Float Moment
The visual contrast is part of the appeal. Dark spiced coffee meets a slow cascade of cream that rests on top before swirling into marbled patterns. Stir lightly for a silky texture or sip through the layers for contrast in every taste.
Substitutions & Variations
- Add a splash of coffee liqueur for an adult version.
- Use coconut milk for a lighter, dairy-free twist.
- Swap sugar for palm sugar to deepen the caramel notes.
- Freeze extra Coffee into cubes to prevent dilution.
Helpful Tips
- Brew the Coffee slightly stronger than usual to account for ice.
- Lightly crush the Cardamom Pods before brewing to avoid dull spice.
- Dissolve Sugar while the Coffee is hot for smooth sweetness.
- Chill the Coffee briefly before pouring over Ice to preserve clarity.
