Ramos Fizz – Creamy New Orleans Gin Fizz

The Ramos Fizz is a New Orleans gin classic with citrus, cream, egg white, vanilla, orange flower water, and soda. Its signature combination of bright acidity, creamy texture, and towering foam makes it one of the most distinctive drinks in the IBA canon.

Ramos Fizz Recipe Image

The Ramos Fizz is a famously elaborate gin fizz built around contrast: tart citrus against cream, botanical gin against vanilla and orange blossom, and a dense egg-white foam lifted by soda. The Ramos Fizz takes more effort than most shaken cocktails, but its soft texture and fragrant finish explain why the drink has endured for well over a century.

Born in New Orleans

Henry C. Ramos created the drink in New Orleans in 1888, where it became closely associated with his Imperial Cabinet Saloon. Originally known as the Ramos Gin Fizz, it became famous for its unusually long shaking method and labor-intensive preparation. The drink remains one of New Orleans' best-known cocktail contributions and is now recognized by the IBA.

What You'll Need

Ingredients

  • Gin: Provides the botanical backbone.
  • Cream: Gives the drink its rich, rounded texture.
  • Lime Juice: Adds sharp citrus acidity.
  • Lemon Juice: Adds a second layer of bright citrus.
  • Egg White: Builds the drink's signature foam and silky body.
  • Simple Syrup: Balances the combined citrus.
  • Orange Flower Water: Supplies the distinctive floral aroma that defines the classic recipe.
  • Vanilla Extract: Adds a subtle sweet-spice note.
  • Soda Water: Lengthens the drink and lifts the foam.

If orange flower water is unavailable, there is no truly equivalent substitute. A tiny amount of orange blossom extract can work only if it is specifically intended for culinary use and dosed very carefully.

Equipment

You'll need a cocktail shaker, fine strainer, standard strainer, ice, and a chilled Highball Glass.

Why the Texture Matters

Most fizzes are straightforward shaken highballs. The Ramos Fizz is different because the texture is part of the recipe itself. Cream and egg white need enough agitation to emulsify into a smooth body, while the final soda addition creates lift without collapsing the foam. Done correctly, it drinks lighter than its ingredient list suggests.

Substitutions & Variations

  • Different gin styles: A classic London Dry keeps the drink crisp, while a softer modern gin makes the floral notes more prominent.
  • Aquafaba: Can replace egg white for a different foam structure, though the result will not exactly match the traditional drink.
  • Half-and-half: Can stand in for cream in a pinch, but produces a lighter texture.
  • Less floral: Reduce the orange flower water slightly if you find it overpowering, but do not omit it when aiming for the classic profile.

Helpful Tips

Use fresh lemon and lime juice because bottled citrus dulls the drink quickly. Shake harder than you would for a standard sour, and keep the second shake free of ice so the foam develops without further dilution. Add the soda gently at the end so you preserve the foam rather than breaking it apart. Chill the glass beforehand to keep the drink cold without serving it over ice.
