The Mexico Martini is a dry tequila cocktail with extra-dry vermouth and just a few drops of vanilla extract. The tequila stays firmly in front, while the vermouth adds herbal lift and the vanilla softens the aroma without making the drink sweet.

Not the Mexican Martini

Despite the similar name, this is a different drink from the better-known Austin-style Mexican Martini. There is no lime juice, orange liqueur, or olive brine here. Instead, the drink stays lean and spirit-forward, with vanilla used only as a tiny aromatic accent.

  • Plata tequila – supplies fresh agave, pepper, and citrus notes.
  • Extra-dry vermouth – adds restrained herbal wine character.
  • Vanilla extract – contributes a small aromatic accent.

A quality blanco tequila can replace plata tequila. Use real vanilla extract sparingly because it is highly concentrated.

Equipment

Use a cocktail shaker, jigger, dropper, strainer, and chilled cocktail glass.

Vanilla by the Drop

The vanilla should sit in the background. Three drops are enough to round the tequila and vermouth; much more can make the drink smell like vanilla rather than agave.

Substitutions & Variations

Use blanco tequila for the closest general substitute. For a slightly drier version, reduce the vermouth modestly rather than increasing the vanilla.

Helpful Tips

Count the vanilla drops instead of free-pouring. Chill the glass before mixing and shake only until properly cold and diluted.
