The In and Out Martini takes extra-dry Martini service to the limit: dry vermouth coats the glass and is discarded before chilled gin goes in. What remains is mostly gin, carrying only a faint herbal trace of vermouth.

The Rinse Is the Recipe

This drink is defined by technique more than ingredients. The vermouth rinse seasons the glass lightly, giving the gin just enough aroma and herbal character to register without softening the drink very much.

What You'll Need

Ingredients

  • Gin – provides nearly all of the drink's volume and flavor.
  • Dry vermouth – seasons the glass in a thin rinse.

Use fresh dry vermouth because even a small residual amount is noticeable.

Equipment

Use a mixing glass, bar spoon, strainer, and chilled cocktail glass.

Why Dilution Still Matters

Extra-dry does not mean undiluted. Stirring the gin properly softens the alcohol, improves texture, and makes the tiny amount of vermouth easier to notice.

Substitutions & Variations

Use vodka instead of gin for an extra-dry vodka version, or leave a small amount of vermouth in the glass for a slightly wetter serve.

Helpful Tips

Chill the serving glass thoroughly and stir the gin long enough to provide proper dilution. A very dry Martini still needs water from the ice to taste integrated.

Mixing method

  1. 1

    Rinse the Glass

Add the dry vermouth to a chilled cocktail glass, swirl to coat the inside, and discard the excess.

  2. 2

    Stir the Gin

Add the gin to a mixing glass filled with ice. Stir until thoroughly chilled and properly diluted.

  3. 3

    Strain and Serve

Strain the chilled gin into the vermouth-rinsed glass and serve immediately.

The In and Out Martini is defined by what leaves the glass: almost all of the vermouth.
