Dark ’n’ Stormy (Bermudian Rum & Ginger Beer Cocktail)
Bold, spicy, and unmistakably Bermudian — the Dark ’n’ Stormy blends rich dark rum with fiery ginger beer and a splash of lime. This effortless classic delivers tropical warmth and zesty refreshment in every sip.

The Storm Born in Bermuda
Sailors in post-WWI Bermuda discovered that dark rum and ginger beer were all they needed to chase away gray skies. The result — the Dark ’n’ Stormy — became the island’s signature drink and remains its only trademarked cocktail.

Why You’ll Love It
A Cocktail with Attitude
Simple yet striking, the Dark ’n’ Stormy layers spice over sweetness for a drink that’s both refreshing and dramatic to watch being made.
Substitutions & Variations
- Spiced Rum Twist: add subtle cinnamon-vanilla notes.
- Ginger Beer Heat: choose a fiery brand like Fever-Tree or Bundaberg.
- Mocktail Mode: skip the rum — you’ll still enjoy a zingy ginger-lime refresher.
Helpful Tips
- Always float the rum last for the classic dark-cloud look.
- Use plenty of fresh ice — dilution dulls the spice.
- Pairs beautifully with grilled seafood or jerk chicken.

I had spicy ginger beer on hand but the sweetness from the rum really paired well. Not my favourite drink but a good way to use that ginger beer you have in the fridge that you've been meaning to get rid of.
